There is Tiberian Sun/Dawn, but the new game is called TiberiUM, why not "an"? Whats the difference? Little confused here...

Tiberian is like saying "English" or "American". I think it's the name for the planet / asteroid from which this stuff originated from. Tiberium, however, is the dangerous substance which was scattered over Earth - it's a physical thing that you can hold.

I'll just (try) explain it another way

Tiberian Dawn - Was when the substance and everything that comes with it arrived and started to spread
Tiberian Sun - The plague is spreading, the dawn of Tiberium has been and gone
Tiberium Wars - Chronicles the war in 2047 based on the Tiberium

So in short - first two are games showing the birth and spread of Tiberium, Tib Wars shows the Third Great Tiberium War.

After this...who knows

Well that does help explain why Tiberium Wars is called as it is not Tiberian Wars.
The next Tiberian would follow the 'arc' Dusk, Sunset, Night etc.

Still not helping answer the question eh :p

I think Bob_Marley got it right. "Tiberian" means "of Tiberium" or derivative of Tiberium.

Tiberian Wars: Wars based around the substance Tiberium.
American citizen: A citizen from America.

If I'm wrong, I can't be wrong by much :P
